1/4 cup peas and carrots (optional, for added color and texture)
Fresh cilantro (optional, for garnish)
Lime wedges (optional, for serving)
Instructions
Step 1: Rinse the Rice
Place the rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
Step 2: Toast the Rice
Heat the vegetable oil in a large skillet or pan over medium heat.
Add the rinsed rice and stir frequently, toasting until the grains turn a light golden brown (about 5–7 minutes). Toasting gives the rice a nutty flavor and helps it stay fluffy.
Step 3: Add Aromatics
Stir in the chopped onion and garlic. Sauté for 2–3 minutes until fragrant and the onion becomes translucent.
Step 4: Incorporate Tomato Sauce and Spices
Pour in the tomato sauce and stir to coat the rice evenly.
Sprinkle in the ground cumin and salt, mixing well.
Step 5: Add Broth and Simmer
Slowly pour the warm chicken or vegetable broth into the skillet, stirring to combine.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan with a tight-fitting lid.
Step 6: Cook Until Tender
Allow the rice to simmer for about 20–25 minutes, or until the liquid is fully absorbed.
Avoid removing the lid or stirring during this time, as it can affect the texture.
Step 7: Fluff and Serve
Once the rice is cooked, turn off the heat and let it sit, covered, for 5 minutes.
Remove the lid and fluff the rice gently with a fork.
Optional Step: Add Garnishes
Stir in peas and carrots for extra color and flavor.
Garnish with fresh cilantro and serve with lime wedges for a zesty finish.
